The Vivienne Chardonnay
Wine
Singlefile The Vivienne Chardonnay is the winery's leading white wine, made only in exceptional vintages. It is named after Singlefile's matriarch Vivienne Snowden.
The fruit is sourced from the winery's crown jewel: Singlefile Vineyard at Scotsdale Valley in Denmark. It is handpicked in passes over several weeks to ensure optimal ripeness.
Each parcel is chilled overnight then whole bunch pressed directly to new and seasoned French barriques. Fermentation takes place on full solids with natural yeasts.
Nine months of barrel ageing on lees follows. After bottling, the wine is matured for a further 18 months before release.
Deep bright yellow, Singlefile The Vivienne Chardonnay has great depth of flavour with a long line of mineral acidity. Cellaring potential is 12 years.
